Oh man, my wife won’t even do this for me….
Just cook it up, freeze it in a thermos. Then put it in checked bags. It will easily keep for 3 hours journey.

According to your question, he drives home, and if that is the case he can simply pack a soft sided cooler when he flies to see you, then at your house put ice in it and put the cooler in his car. If he is flying, I would recommend a hard plastic ice pack (can be bought in any sports store or walmart, target, etc.) and a hard cooler, pack the food and fill in any open space with crumpled up newspaper or something to keep the food from bouncing around, and then tape the cooler shut (tape it real good) and then just check the cooler as a check in bag.
You may want to check since a lot of airlines are now charging to check baggage, even the first bag/item. Also, he will not be able to bring the ice pack or ice onboard, since liquids and gels are prohibited on flights (at least items over 3 oz’s are prohibited). Hope this helps
